Bacon Jam with Coffee and Maple Syrup

Have you ever heard of Bacon Jam? I hadn’t until we tried it recently at our local Brew Fest.  We had it on top of hot dogs and it was delicious. Bacon jam will keep in your refrigerator for at least 2-3 weeks.  Try it on bagels, burgers, eggs, and so on.  I want to try it on top of crostini as an appetizer.

Bacon Jam
 
This savory jam tastes great on hot dogs, hamburgers, bagels and more
Ingredients
  • 1½ lb. bacon, cooked and crumbled (save about half of the drippings to use in the mix too)
  • 2 medium yellow onions, diced
  • 3 garlic cloves, finely minced
  • ½ C. apple cider vinegar
  • ½ C. brown sugar
  • ¼ C. maple syrup
  • ¾ C. coffee
Instructions
  1. Place all ingredients in a slow cooker on low for 6-8 hours until sauce turns to a nice syrupy consistency. Chop to desired consistency before serving.

Everything is better with bacon, isn’t it?  This bacon blue cheese potato salad is creamy, flavorful and tangy.  If you like bacon and blue cheese, you’ll love it.  It goes perfectly with a burger straight off the grill.  Bring on summer!

Frugal Tips:  Look for blue cheese at stores like ALDI, Sam’s Club and Costco to save money.

Ingredients
  • 2½ lbs red potatoes, cubed
  • 6 slices bacon, cooked, cooled and crumbled
  • ½ C. mayo
  • ¼ C. sour cream
  • ½ teaspoon salt
  • ¼ teaspoon pepper
  • 4 oz. blue cheese crumbles

Instructions
  1. Boil potatoes with the skin on until fork-tender (about 12-13 minutes). Meanwhile, add the other ingredients in a large bowl. After potatoes have cooled, dice them and add to dressing ingredients. Chill in the refrigerator for 4-6 hours or overnight.

Bacon Cheddar Beer Bread with Self Rising Flour

 One of the reasons I like beer bread is that it is SO easy.  It surprises me how costly the prepackaged mixes are!  The basic beer bread with self-rising flour recipe is super-frugal and only uses a few ingredients.  Plus, it’s easy to tweak the basic recipe to come up with fun creations like this Bacon Cheddar Beer Bread.  It’s great to serve at a party with dips and spreads.

Frugal Tip:  If you don’t have self-rising flour, you can make your own:

  • 1 cup all-purpose flour
  • 1-1/2 tsp baking powder
  • 1/2 tsp salt

This variation of beer bread uses self-rising flour to make it easy.
Ingredients
  • 12-oz. beer
  • 3 C. self-rising flour
  • ¾ C. Cheddar cheese
  • 8 slices bacon, chopped into crumbles
  • ¼ C. butter
Instructions
  1. Mix the beer, self-rising flour, Cheddar cheese and bacon together in a bowl. Spread batter in a greased bread pan.
  2. Melt the butter and pour over the top.
  3. Bake 40-45 minutes at 375. At the end, I sprinkled a little cheese on the top of the loaf for color.

These sweet and savory party poppers require only four ingredients, but will be a big hit at your next party!
Ingredients
  • 8 oz. pitted dates
  • 4 oz. brie cheese round
  • 6 oz. slivered almonds
  • 1.5 lb. thick sliced bacon
Instructions
  1. Preheat oven to 375.
  2. Cut dates in half lengthwise.
  3. Cut brie into bite-sized pieces (about the size of a peanut). Place a piece of brie and 4 almond pieces on the open half of the date; place the other half on top.
  4. Quarter the bacon slices and wrap tightly around the stuffed date. Secure with a toothpick.
  5. Line a baking sheet with foil an place wrapped dates on top.
  6. Bake for 15 minutes until bacon is crispy.
  7. Serve warm.
