These Oreo brownies couldn’t be easier!  They call for three layers of chocolatey goodness:  for which you can use prepackaged goodies.  Nobody will be the wiser!  I used ingredients from ALDI to save even more money.

Roast Leg of Lamb with Balsamic Reduction

roast leg of lamb

If you’ve never had leg of lamb, you’re missing out on a culinary treat.  It’s tender, and somewhat earthy tasting.  I love it with Mediterranean side dishes like couscous (pictured above).    When I saw it at ALDI, I knew I had to get it!  I use this recipe as a basis, but created a balsamic reduction as well.

Frugal Tips:  When cooking a more expensive cut of meat, a little bit goes a long way.  Make sure you have plenty of frugal side dishes to go along with it to bring down the overall cost of the meal.

Roast Leg of Lamb with Balsamic Reduction
Cook time:
Total time:
Serves: 4-6
This roast leg of lamb dish is simple, yet will please the most sophisticated of palates.
  • Leg of lamb roast (2-4 lb.)
  • ¼ C. honey
  • 2 Tbsp. Dijon mustard
  • 2 Tbsp. fresh rosemary
  • 1 tsp. lemon juice
  • 4 cloves garlic, minced
  • 1 tsp. cracked black pepper
  • Sea salt to taste
  • ¼ C. balsamic vinegar
  1. In a bowl, combine the honey, mustard, rosemary, lemon juice and garlic. Pour over the lamb roast, cover and marinade at least 2-3 hours in the refrigerator (or overnight).
  2. Preheat oven to 450 degrees. Place lamb on a roasting rack and add salt and pepper to taste. Cook for 20 minutes, then reduce temp to 400 degrees. Continue cooking 55-60 minutes or until the internal temperature reaches 145 degrees.
  3. Remove roast and allow to sit for 10 minutes before carving. While you’re waiting, pour remaining marinade into a small saucepan and add balsamic vinegar. Simmer until reduced, then pour over the roast just before serving.

Asian Glazed Salmon: A Flavor-Packed Dinner in Under 30 Minutes

asian glazed salmon ruby tuesday

The best thing about salmon, other than its great flavor, is the fact that it’s good for you.   It’s packed with Omega-3 fatty acids that have been shown to lower your cholesterol and improve your memory (among other great things).

When it comes to preparing salmon, I often get stuck in a rut.  I went about searching for recipes the other day and came up with this one.  I love that this dish can be made in under 30 minutes from start to finish.  The red pepper flakes add a kick, but you can dial back the heat by adding more or less according to your taste.  Hoisin sauce is almost like an Asian molasses.  I found it in the ethnic section of our regular grocery store, but if you have trouble finding it you can always get it on Amazon.com.   If you want to go the frugal route, don’t get it at all and substitute molasses.  It won’t be as authentic-tasting, but it will still be good.

Frugal Tips:  Many people avoid eating salmon because it tends to be expensive.  A bag of four salmon fillets is just $4.99 in the freezer section at ALDI Food Stores.   When you offset a dish like this by serving it with rice, the cost is actually very reasonable.

sweet and savory party poppers

These Sweet and Savory Party Poppers were one of the best things I sampled at the ALDI Taste Kitchen Event.  Thanks to the ALDI kitchen team and Chef Alyssa for sharing the recipe.

Frugal Tip:  ALDI has a variety of gourmet cheeses as seasonal offerings during the holiday season.  Goat cheese, brie, edam, and gouda are available for about 30-50% less than what you would pay at your typical grocery store.  View photos of ALDI 2012 fall seasonal offerings.
