 I picked up these cute little Fillo Cups at Cub Food recently, not quite sure what to make with them.  I knew I wanted to make a dessert.  And that I had cream cheese, heavy cream and ricotta already in the fridge.  Basically, I landed on this recipe in an effort to use up what I already had.

The nice thing about Fillo cups is their flexibility.  You can put just about any filling inside them and they’ll look elegant, which makes them great for parties or special dinners at home.  I made these to go with my Italian-themed dinner for Scott the other night.  We had a wonderful braised beef as our first course and these little cuties as dessert.

Frugal Tips:  Use up what’s in your refrigerator!  If you’re like most families, you’re throwing hundreds of dollars in food away each year.  If you can’t use you what you have by its expiration date, freeze it for later use.

Fillo Cups with Almond Cream
 
A sweet filling for fillo cups, cannoli or other pastries
Ingredients
  • ½ of a 15-oz. container ricotta cheese, strained (I used a coffee filter to strain it)
  • 4 oz. cream cheese, softened
  • 1 C. confectioners’ sugar
  • ½ C. heavy cream
  • ½ tsp. almond extract
Instructions
  1. Whip ingredients in a mixer until well blended.
  2. Pipe the filling into the fillo cups with a pastry bag
  3. Top with a raspberry, blackberry, or piece of chocolate – get creative!

 

French Toast Cupcakes

This recipe is for all those people who believe in eating dessert first!  Is breakfast too early for a cupcake?  I think not!  This French Toast Cupcakes recipe was originally posted over on Mommysavers.com.  It’s a fun way to use up day-old bread.  Plus, you’ll win extra points with your kids if you give them cupcakes before school!

Frugal Tips:  Look for French bread on the reduced bakery rack at Walmart.  I can get it for around $1 per loaf!

 

Ingredients
  • ½ loaf French bread, cubed (or any kind of stale or day-old bread)
  • ½ C. sour cream
  • 4 large eggs, beaten
  • 1¼ C. half and half (use milk to make it even more frugal)
  • 3 Tbsp. butter or margarine, melted and cooled
  • ¼ C. maple syrup
  • 2 Tbsp. sugar
  • ½ tsp. cinnamon
  • Cool Whip Frosting
Instructions
  1. Preheat oven to 350 degrees. Place bread cubes in a mixing bowl. Combine other ingredients and pour over bread cubes, stirring to saturate completely.
  2. Scoop batter into muffin cups. Bake for 30-35 minutes or until golden brown and inside is baked through.
  3. Allow to cool slightly and top with vanilla Cool Whip Frosting.

White Chocolate Cranberry Bread Pudding

This White Chocolate Cranberry Bread Pudding is as delicious as it is lovely.  Plus, it’s really easy to make.  To make it frugal, purchase day-old French bread to use in this recipe.  I regularly find it on the sale racks at Walmart for $.97 per loaf.  Plus, French bread can be frozen for later use.  Did you know that you can also freeze fresh cranberries?  Buy then on sale now, freeze, and use throughout the winter!

White Chocolate Cranberry Bread Pudding

Ingredients
  • No-Stick Cooking Spray
  • 3 large eggs
  • 1 (14 oz.) can Eagle Brand® Sweetened Condensed Milk
  • 1¾ cups hot water
  • ¼ cup butter, melted
  • 2 teaspoons ground cinnamon
  • 1 teaspoon vanilla extract
  • 8 cups cubed French bread
  • 1 cup dried cranberries
  • ⅔ cup white chocolate chips
Instructions
  1. HEAT oven to 350ºF. Coat 8-inch square baking pan with no-stick cooking spray.
  2. BEAT eggs in large bowl. Blend in sweetened condensed milk, water, melted butter, cinnamon and vanilla. Stir in bread, dried cranberries and baking chips until completely moistened. Pour into prepared baking pan.
  3. BAKE 55 to 60 minutes or until knife inserted in center comes out clean. Serve warm or let cool.

My Holiday Baking is Underway! (Well, kind of.)

My holiday baking is underway, and I couldn’t be more excited. I was BORN rockin’ the Christmas season. LITERALLY. (My birthday is December 25th).  Even though my kids are getting older and roll their eyes at some of my “cutesy” Christmas goodies, I still bake them with love.  These projects allow me to express my craziness creativity in the kitchen in a socially acceptable way.

My first three holiday “baking” projects don’t actually involve turning the oven on at all.  They’re all made using just the stovetop or microwave along with some fun candy embellishments.   They’re perfect for kids to help with, since they love “decorating” the treats.  Plus, if you still have any Halloween candy left over (yeah, I know – unlikely) it’s a good way to use it up.

Last year, I compiled my creations here: 25 Days of Christmas Treats.  My goal this year?  25 new Christmas treats in December.  Don’t worry – I don’t eat them all myself.  I give them to friends and neighbors, send them to my husband’s office – whoever will eat them.  This year, I’ll be featuring them on the Mommysavers Christmas Recipes pages again as well as here on Frugal Bites.

Nutter Butter Turkey Cookies for Thanksgiving

How cute are these Nutter Butter Turkey Cookies?  They’d be perfect on the table at Thanksgiving.  To make them, you’ll need:

Step #1:  Choose your candy for the turkey’s nose, wattle, and feet.  Use a serrated knife to “saw” the M&Ms in half.  I used the red ones as the turkey wattle and the brown ones as the turkey feet.  Really, you could use similar candy for any of these parts.  It’s a fun way to use up any leftover Halloween candy (if there is any). Yes, some will break.  You may have to eat your mistakes.  I have really been having fun making seasonal treats from the Wilton Candy Eyes.  I also used them to make Spider Cupcakes and Elmo Cupcakes.  You can buy them at craft stores that carry cake decorating supplies, or on Amazon.com.

Step #2: Break the Oreos in half and use the part with the most white frosting on it as the base to hold the turkey upright.   Add additional white frosting on top to provide extra support.

Step #3:   Secure the candy corn to the back of one half of an Oreo as turkey feathers.

Step #4:   Add frosting to the back of the Nutter Butter cookie where the turkey feathers will go.  Press together.
